Job description

The position will require:

  • planning and coordinating the implementation of research that involves numerous research team members and multiple facilities.
  • Assistance with handling livestock and performing harvest steps post-stunning,
  • measuring pH and temperature declines in carcass muscles during chilling, cooler shrink determinations, excising muscles, and fabricating carcasses.
  • Documenting specifics on experimental units (livestock details) and postmortem times various tests performed.
  • In some cases, research will entail traveling to commercial packing plant facilities to collect pH and temperature data as well as carcass yield data.
  • Preparations of fresh meat samples for meat color display (setting up the lighting display system, modified atmosphere packaging).
  • Measure lighting intensity and temperatures during display.
  • Grinding and homogenizing samples for various biochemical and meat quality assessments.
  • Determining myoglobin concentration, chemical states of myoglobin, lipid oxidation (TBARS, hexanal), instrumental texture analysis, myofibrillar fragmentation index, sarcomere length (laser and microscopic), water holding capacity (centrifuge, Carver Press), pH, oxygen consumption, and proximate analysis. Cryosectioning and muscle fiber type determination.
  • Collecting and preparing samples for microbiological determinations associated with meat bacterial pathogens (culture development, enumeration, confirmation). Preparations of pathogenic cultures for meat inoculation studies.
  • Relative to vascularly rinsing carcass experiments, develop assignment of the experimental treatments to the animals (account for breed, animal age, parity), prepare bacterial culture for inoculation, assist with live animal inoculation, monitor rectal temperatures, document soundness of vascular rinse application, measure the rinse solution at various application points, collect rinse solution samples, necropsy carcasses to collect lymph nodes.
  • perform microbiological pathogen assessments, analyze samples that contain bacteriophage (spot analysis),
  • and coordinate appropriate disposal of biological wastes.
  • Quantitate fluorescein in samples from vascularly rinsed carcasses when this dye is incorporated.
  • Prepare packages for shipping biological hazard samples.
  • Statistically analyze data and prepare progress reports, manuscript drafts, meeting abstracts, and electronic presentations (PowerPoint). Maintain research lab instrumentation.
  • Order research supplies and keep track of research expenditures.

Identifies research problems, designs research methodologies, performs research, and prepares and/or presents results for presentation to professional organizations or for scholarly publications to help advance research.


  • 10% Identifies research problems and develops complex research methodologies and procedures
  • 50% Collects and analyzes complex research data, conducts experiments and interviews, and documents results according to established policies and procedures under general supervision
  • 5% Conducts literature reviews, prepares reports and materials, and disseminates information to appropriate entities
  • 5% Attends and assists with the facilitation of scholarly events and presentations in support of continued professional development and the dissemination of research information
  • 10% Writes or assists in developing grant applications and proposals to secure research funding
  • 10% May supervise the day-to-day activities of a research unit as needed
  • 5% Serves as a unit subject matter expert and liaison to internal and external stakeholders providing advanced level information and representing the interests of a specialized research area
  • 5% Monitors program budget and approves unit expenditures

Terminal Degree
Ph.D. in Animal Science or Food Science

  • At least 3 years associated with conducting research involving livestock harvest, muscle biochemistry, muscle histology,
  • and meat quality in addition to meat microbiology associated with bacterial pathogens.
  • Experience with vascularly rinsing carcasses and necropsy work involving collection of lymph nodes is required.
    Work Type:

Full Time: 100%
It is anticipated this position requires work be performed in-person, onsite, at a designated campus work location.
Appointment Type, Duration:

Terminal, 12 month appointment.
This position has the possibility to be extended or converted to an ongoing appointment based on need and/or funding

Minimum $61,000 ANNUAL (12 months)
